Caramel Apple Spiced Cookies

These super tasty apple spiced cookies are one of my favourite fall treats! I made them for my family last week and they were gone in two days! I would recommend making a double batch if you have snackers in the house!


These cookies are paleo, AIP, gluten free and nut free!

These cookies look great but taste better! These cookies are soft and chewy with the touch fall flavours and yummy caramel on top!

I used apple pie spice and gelatin to create this soft fall flavoured cookie! You can also make these cookies vegan with an egg replacement like flax egg!




Caramel Apple Spiced Cookies


Prep Time: 10 min Cook Time : 15 min Total Time: 25 min Servings: 12


INGREDIENTS


for the cookies

  1. 1 cup tigernut flour

  2. 1/4 cup tapicoca starch

  3. 1 tbsp gelatin (I used this one)

  4. 1/8 tsp baking soda

  5. 1/2 tsp cinnamon

  6. 1/2 tsp Apple pie spice ( I used this one)

  7. 1/4 cup pure maple syrup

  8. 2 tbsp coconut oil, melted

  9. 1/2 pink lady apple, shredded

for the homemade caramel sauce

  1. 1/2 cup coconut cream

  2. 1/4 cup coconut sugar

  3. pinch sea salt


INSTRUCTIONS


for the cookies

  1. Preheat the oven to 375 F and line a baking sheet with parchment paper

  2. In a medium sized bowl mix together tigernut flour, tapioca starch, baking soda, gelatin, and cinnamon

  3. Stir in the maple syrup, and coconut oil and stir well to combine.

  4. Shred half of an apple over a plate and pat to pick up excess liquid

  5. Fold in the shredded apple into cookie mix

  6. Form the batter into cookies. You should have between 10-12

  7. Transfer the cookies into oven a bake for 9-10 minutes or until lightly browned edges form

  8. Remove from the oven and carefully transfer to a cooling rack. Allow the cookies to cool fully.

  9. Using a spoon to pour caramel over each cookie!


for the homemade caramel sauce

  1. Combine the coconut cream, sugar, and salt in a saucepan over medium heat and stir to combine. Bring to a low boil, and reduce to a low simmer, stirring often.

  2. Let caramel simmer for desired thickness
