Chocolate Chip Cookies (Paleo, GF & Keto Option)

Okay guys I have FINALLY perfected my chocolate chip cookie recipe! These cookies taste like your traditional chocolate chip cookie but they have a healthy spin on them!


They are crispy, chewing and perfectly soft! One of my favourite hobbies is taking traditional comfort food recipes and transforming them into "healthier" versions!


These cookies are paleo, GF, DF & can be made Keto!



Ingredients you'll need!

  • Cashew Butter (the smoother the better!)

  • Organic Cane Sugar or Coconut Sugar or Monk Fruit (for keto)

  • Ghee/Coconut Oil

  • Eggs

  • Coconut Flour

  • Baking Soda

  • Salt

  • Chocolate Chips (I use these)

Paleo Chocolate Chunk Cookies


Prep Time: 5 min

Baking Time: 10-12 min

Servings: 18


INGREDIENTS


for the cookies

  1. 3/4 cup smooth cashew butter (sub Tahini for a nut-free recipe!)

  2. 1/2 cup organic cane sugar (sub maple sugar for paleo or monk fruit for Keto)

  3. 2 tablespoons ghee (see notes)

  4. 2 eggs

  5. 1 tsp pure vanilla extract

  6. 1/3 cup coconut flour

  7. 1/2 teaspoon baking soda

  8. 1/4 teaspoon salt

  9. 1/3 cup dairy-free dark chocolate chips (I used Enjoy Life Chocolate Chunks)

INSTRUCTIONS


For the cookies

  1. Preheat oven to 350 degrees and place parchment paper in a baking pan

  2. Using an electric mixer, cream together cashew butter, sugar, ghee, eggs and vanilla extract

  3. In a small bowl, mix coconut flour, baking soda and salt

  4. Mix dry ingredients into wet until fully combined

  5. Add in chocolate chips! You can add as much as you would like hehe

  6. Chill dough in the fridge for 30 min before scooping cookies onto the baking sheet. Once cooled, section out 8 cookies on a baking sheet (you will need to bake two sets of 8)

  7. Bake in the oven for 10- 12 minutes. Make sure to drop the cookie pan on a countertop halfway through baking to flatten out cookies (this makes them crispy & chewy). Repeat after cookies are fully baked

  8. Let cookies cool for 5 min on a baking pan, then place on a wire rack to cool


NOTES

  1. You can sub coconut oil for ghee for a strict paleo cookie!

  2. The cookie batter is super sticky! Make sure to cool in the fridge for 30 min before baking the cookies!

  3. All nutritional factors will vary based on the ingredients used.

  4. You can store these cookies in the fridge for 5 days or in the freezer for a couple of months
