Paleo Chocolate Chunk Cookie Bars (Vegan Option)

Oh man! These Chocolate Chunk Cookie Bars are my new fav paleo dessert! They are loaded with chocolate but if you can customize how much chocolate you put in!


If you like traditional chocolate chip cookies, then this recipe is for YOU!


They are Paleo, GF, DF & tasty!


It's like your favourite cookie but disguised as your fav chocolatey treat.... brownies!

These cookie bars are a perfect treat that satisfies your sweet tooth without all the processed sugars n' carbs... (there's nothing wrong with that either).


I love creating treats that are healthier because that's how I feel my best!


This recipe is easily customizable which is one thing I love! See the list below for substitutions!


  • 1 egg -- Flax egg or Bob's Red Mill Egg Replacer

  • 1/4 Almond milk -- Coconut Milk or Whole Milk

  • 1/2 Cup chocolate chips -- Nuts or Cocoa Nibs

Prep Time: 10 min Baking Time : 20 min Total Time: 30 min Servings: 12


INGREDIENTS


for the cookies

  1. 1 Large Egg or sub Bob's Red Mill Egg Replacer for Vegan option

  2. 1/2 cup creamy almond butter

  3. 2/3 cup coconut sugar

  4. 1/4 cup coconut milk

  5. 1 1/4 cup almond flour

  6. 1 teaspoon baking powder

  7. 1/2 cup dark chocolate chunks (I used these)

  8. Sprinkle of course sea salt (optional)

INSTRUCTIONS


For the bars

  1. Preheat oven to 350 degrees and place parchment paper in an 8 x 8 baking pan

  2. Using an electric mixer, cream together the egg, almond butter, coconut sugar and coconut milk

  3. In a small bowl, mix almond flour and and baking powder until combined

  4. Mix dry ingredients into wet until fully combined

  5. Add in chocolate chunks

  6. Bake in oven for 20-25 minutes

  7. Wait for bars to fully cool (you can put them in fridge)

  8. Slice into 16 bars


NOTES

  1. All nutritional factors will vary based off of ingredients used.

  2. You can store these cookies in the fridge for 5 days or in freezer for a couple months
