Cookie Dough Collagen Energy Bites

Man oh man not sure about you but I could eat cookie dough every day. Cookie dough for breakfast or lunch.. or dinner too, just kidding but seriously, who doesn't love cookie dough. These energy bites are a perfect mid day pick me up that will satisfy your sweet tooth. They are loaded with healthy fats, whole foods and collagen. They are AIP, Whole30 and Paleo.



These energy bites are awesome because they are NO BAKE and are loaded with collagen peptides which supports healthy hair, skin, nails, gut health and adds protein. I use Vital Proteins Collagen Peptides as it is one of my favourite health food brands.





This recipe is super easy to make, you just add all ingredients in a medium sized bowl then roll them into desired sized bites.



Cookie Dough Collagen Energy Bites


Prep Time: 5 min Cook Time : 5 min Total Time: 5 min Servings: 8-10 bites


INGREDIENTS

  1. 1 cup unsweetened shredded coconut

  2. 1/3 tigernut flour

  3. 2 scoops vital proteins collagen peptides

  4. 1/3 cup pure maple syrup or honey

  5. 3 tbsp coconut oil, melted

  6. 1/4 cup dairy free chocolate chips ( I used lily's dark chocolate chips)


INSTRUCTIONS

  1. Place all dry ingredients in a medium sized bowl and mix (tigernut flour, coconut and collagen peptides)

  2. Stir in maple syrup, coconut oil and chocolate chips into dry mixture - mix until well combined

  3. Using a baking pan lined with parchment/wax paper begin rolling mixture into bite sized balls

  4. Chill fridge for at least 1 hour

  5. Enjoy chilled!


NOTES

  1. Keep them in the fridge or store in freezer. Enjoy chilled
