Paleo Apple Pie Bars (Vegan, AIP)

Baking this super yummy treat is the perfect way to spend a beautiful fall day!


This recipe is one of my new favourites because they taste like the real thing and works with so many intolerances and diet restrictions!


These bars are paleo, GF, AIP, vegan and whole30!

The crust is flakey and crumbly like a traditional apple pie but a heck of a lot better for you! This recipe uses only whole foods and healthy fats!




I topped this bar with coconut milk ice cream and salted caramel sauce to give it a nice flavour punch!


I love using coconut bliss ice cream because all their stuff is AIP, Paleo, GF and dairy free! The Madagascar Vanilla Bean and Cappuccino flavours are to die for!



Paleo Apple Pie Bars


Prep Time: 10 min Cook Time : 45 min Total Time: 55 min Servings: 9


INGREDIENTS


for the apple pie filling

  1. 3 medium sized apples, chopped (combination of tart and sweet like golden delicious, pink lady and granny smith)

  2. 1/2 cup water

  3. 1 1/2 tbsp coconut sugar

  4. 2 tsp arrowroot starch

  5. 1/2 tsp apple pie spice

  6. 1/2 tsp cinnamon

  7. Juice of half a lemon

for the apple pie crust

  1. 1 1/4 cup tiger-nut flour

  2. 1/4 cup tapioca starch

  3. 2 tbsp maple syrup

  4. 2 tbsp coconut sugar

  5. 1/3 cup + 2 tbsp coconut oil, melted

  6. 1/4 cup + 1 tbsp coconut butter, melted (see notes)

  7. 1/4 tsp baking soda

  8. 1/2 tsp apple pie spice

  9. 1/2 tsp cinnamon

for the homemade caramel sauce

  1. 1/2 cup coconut cream

  2. 1/4 cup coconut sugar

  3. pinch sea salt


INSTRUCTIONS


for the apple pie bars

  1. Preheat the oven to 350 F and line a baking pan with parchment paper

  2. Combine apple pie filling in a saucepan over medium heat. Stir well for about 8 min or until apples soften

  3. In a medium sized bowl, combine dry ingredients and mix well. Add the wet ingredients to the dry mixture and mix until combined

  4. Using the majority of the crust mixture, flatten the crust against the baking pan. Leave approximately 4 tbsp aside for later

  5. Pre bake the the crust in the oven for 6 minutes. Remove and allow to cool for 5 minutes

  6. After crust has cooled for 5 minutes, pour apple pie filling over the crust and evenly distribute

  7. Evenly distribute the remainder of crust over the apple pie filling then slightly flatten it

  8. Bake in oven for 20-25 minutes or until golden

  9. Let the bars fully cool before removing from pan and cutting them into 9 bars

  10. Top with homemade caramel sauce and ice cream if you would like

  11. ENJOY!

for the homemade caramel sauce

  1. Combine the coconut cream, sugar, and salt in a saucepan over medium heat and stir to combine. Bring to a low boil, and reduce to a low simmer, stirring often.

  2. Let caramel simmer for desired thickness
