Vegan Gingersnap Cookies

These cookies are the type of cookies that no one would know are vegan, paleo, AIP, GF and dairy free!
They are so soft and chewy and taste like a traditional gingersnap cookie, but with a healthy spin on it.
With holiday season coming up, these cookies are the perfect gift to bring to any gatherings or....virtual zoom festivities.

I love the taste of molasses and now that Christmas is around the corner, I have an excuse to use it in every recipe.
These cookies are the perfect mid-day treat, especially when paired with egg nog!
I mean who doesn't love a holiday cookie dipped in some nog, and the best part is, everything is vegan, AIP, Paleo, GF and Dairy-free

When I tested this recipe, I asked my family if they could tell the cookies were vegan/paleo and before they could answer, my dad shoved two more in his mouth.
So I think its safe to safe, these cookies are a crowd pleaser!
Vegan Gingersnap Cookies
Prep Time: 15 min Cook Time : 8-10 min Total Time: 25 min Servings: 12
INGREDIENTS
for the cookies
3/4 cup tigernut flour
1/2 cup tapioca flour
1 tsp ground ginger
1 tsp ground cinnamon
1/4 tsp ground cloves
1/4 tsp aluminum free baking soda (I use this)
3 tbsp maple syrup
2 tbsp blackstrap molasses
1/4 cup + 1 tbsp coconut oil, softened
Egg replacer (I use this)
2 tbsp coconut sugar (optional)
INSTRUCTIONS
for the sugar cookies
Preheat the oven to 350 F and line a baking pan with parchment paper
In a large bowl, mix together tigernut flour, tapioca flour, ginger, cinnamon, cloves and baking soda
Stir in the maple syrup and molasses. Fold in the coconut oil and mix until fully combined
Using a cookie scoop or spoon, scoop dough and make 10-12 cookies
Place cookies on baking pan and flatten with the palm of your hand
Sprinkle coconut sugar on cookies if desired
