Vegan Oatmeal Chocolate Chip Cookies

My absolute favourite cookie growing up was oatmeal chocolate chips cookies! I have been wanting to reinvent them in a gluten-free and refined sugar free way for years... and finally after a couple tries, they are here!


These cookies are a great mid day snack but, I also like them for breakfast! I love a nice sweet breakfast, so this week, lets just say I have been eating a lot of cookies (oops).


Man these cookies were so easy to make that ANYONE can make them. All you do is mix all ingredients in one bowl n' call it a day!


Not only are these cookies vegan, but they are gluten free, dairy free, refined sugar free and sooooo yummy.

I used GF oats, but you can use original oats if you can tolerate gluten.


Also you can add some fun stuff in these cookies like;

- walnuts

- pecans

- banana



Vegan Oatmeal Chocolate Chip Cookies

Prep Time: 10 min Cook Time : 12 min Total Time: 22 min Servings: 12-15

INGREDIENTS


for the cookies

  1. 1 ¼ cups GF oats

  2. ¼ cup almond flour

  3. 2 ½ tablespoons ground flaxseed (optional)

  4. 1 teaspoon ground cinnamon

  5. ½ teaspoon ground nutmeg

  6. 1/8 teaspoon ground cloves

  7. ¼ teaspoon salt

  8. 4 tablespoons coconut oil, melted

  9. ¼ cup almond butter

  10. ¼ cup coconut sugar

  11. ¼ cup pure maple syrup

  12. 1 teaspoon pure vanilla extract

INSTRUCTIONS


for the cookies

  1. Preheat the oven to 350 F and line a baking pan with parchment paper

  2. In a large bowl, mix together all of the dry ingredients: oats, almond flour, flaxseed, spices n' salt

  3. In a medium bowl, whisk together all of the wet ingredients (coconut oil, almond butter, coconut sugar, maple syrup and vanilla)

  4. Pour the wet mixture over the dry mixture

  5. Using a spatula, fold together wet & dry ingredients until smooth. Then pour chocolate chips in and mix

  6. Scoop cookie dough onto the prepared baking sheet

  7. Using a fork or spoon, flatten cookies

  8. Bake for 12 minutes

  9. Take cookies out of the oven and allow to cool on baking sheet for 5 or so minutes

  10. Once cooled, transfer cookies to a cooling rack

  11. Enjoy!!
