Cream of Chicken Soup (Paleo & Keto)

One of my favourite soups growing up was cream of chicken soup and since going paleo, i've been wanting to re-create it!


This soup is perfect for a snowy Sunday because it'll warm ya right up and keep you full for hours!


This soup is paleo, keto, Whole30, GF & DF

One of my favourite things about this soup, is that you can add anything your heart desires into it!


Some ingredients you can add in!

- carrots

- peas

- white beans

- chickpeas

- mushrooms

- sweet potatoes

- cauliflower


Having flexibility with ingredients in a recipe means that you can alter to your dietary restrictions! For example, if you are keto, sub cauliflower to potatoes!



Cream of Chicken Soup

Prep Time: 10 min Cook Time : 35 min Total Time: 45 min Servings: 6

INGREDIENTS


for the cookies

  1. 2 tbsp ghee

  2. 1 medium white onion, diced

  3. 3 garlic cloves, diced

  4. 2 cups celery, diced

  5. 1 medium russet potato, chopped

  6. 1 box of chicken broth, I use this one

  7. 1 can of coconut cream, I use this one

  8. 2 large chicken breasts

  9. 1 organic chicken bullion cube, I use this one

  10. 3 tbsp tapioca flour

  11. 1 tbsp fresh parsley

  12. 1/2 tbsp ground sage

  13. 1/2 tbsp oregano

  14. 1 tbsp ground thyme

  15. 1/2 tbsp rosemary

  16. 2 tsp ground pepper

  17. Salt, to taste


INSTRUCTIONS


for the cookies

  1. Heat ghee in a large sauce pan until melted

  2. Add in onion, garlic and celery and cook for 5 min

  3. Add in chicken broth and coconut cream and bring to a light boil

  4. Once boiling, add in chicken breasts (we will be shredding them after), potatoes and herbs. Cook for 15-20 min

  5. Turn heat on low and remove chicken from pot and place on a cutting board

  6. Shred chicken and then return to pot

  7. Take out about 2 cups of soup liquid and whisk in tapioca flour

  8. Add flour mixture into soup and mix vigorously (be careful as there is some splatter)

  9. Keep on low heat for 5 minutes to allow soup to thicken

  10. Top with green onions, salt & pepper if you desire
