Mediterranean Orzo Salad (GF, Vegan)

This recipe is the perfect side dish to bring to a summer BBQ or just have on a warm day!
It's been scorching hot this long weekend and this dish has been my favourite lunch because its quick, easy and nutritious!
This recipe is dairy-free, gluten-free and vegan!


This orzo salad is super easy to make and only needs 7 ingredients!
What you will need!
- GF Orzo or traditional Orzo if you are not GF
- Tomatoes
- Cucumber
- Red onions
- Vegan feta or traditional feta if you are not DF or Vegan!
- Red/Green/Yellow Peppers
- Greek Vinaigrette (homemade or store bought)
If you are looking to buy a store made greek vinaigrette, be careful because a-lot of dressings can be full or artificial ingredients and sugars!
I love the Primal kitchen Greek Vinaigrette because the ingredients are minimal and clean but the flavour is AMAZING!

Mediterranean Orzo Salad
Prep Time: 10 min
Baking Time: 10-12 min
Servings: 8
INGREDIENTS
for the orzo salad
2 boxes Gf Orzo (I buy this) or 4 cups traditional Orzo, cooked
3 cups cherry tomatoes, chopped
1 medium cucumber, diced
1/2 medium onion, diced)
2 large yellow & red peppers, chopped
Black olives, chopped (optional)
1 cup vegan feta or traditional feta, cubed
INSTRUCTIONS
for the Orzo salad
Bring a large pot of slated water to a boil and follow orzo cooking instructions
Once orzo is cooked place in a large bowl and place in fridge for 30 min to cool
Once orzo is cooled, begin to add chopped veggies to the bowl
When veggies are added to the bowl, add in feta and greek dressing
Mix well and store in fridge prior to eating
