Healing Chicken Noodle Soup

This has been a popular dish this month for my family, so I thought it was time to share! This soup has all the fun stuff you'd want in a soup. It has carrots, celery, onions, herbs, chicken and NOODLES!


If you're like me and your favourite part about chicken soup is the noddles, then this soup is for you.


This soup is Paleo, Keto, AIP, GF, Dairy Free and Whole30!



This soup is super easy to make and gives you room for freedom, depending on your dietary restrictions.


If you sub out the noodles for a lower carb option, this soup is keto!


There is so many options when making a soup like this and I like to use whatever I have leftover in the fridge to bring out the best flavours. This past week I had cooked a whole chicken, so I used the leftover meat in the soup and kept the bones to make homemade bone broth!

Healing Chicken Noodle Soup

Prep Time: 10 min Cook Time : 40 min Total Time: 50 min Servings: 6-8

INGREDIENTS


for the chicken noodle soup

  1. 1 tbsp Ghee

  2. 2 cloves garlic, minced

  3. 1 medium yellow onion, chopped

  4. 3 cups celery, chopped

  5. 3 cups carrots, chopped

  6. 1 1/2 lbs Chicken, Chopped (see notes)

  7. 1 Box of Jovial Fusilli Noodles, (you can buy here)

  8. 8 cups chicken Bone Broth

  9. 1 tbsp fresh parsley

  10. 1 tbsp fresh thyme

  11. Salt n' pepper, to taste


INSTRUCTIONS


for the sugar cookies

  1. In a large pot on medium heat, add ghee, onions and garlic

  2. Once onions are transparent, add in celery and carrots

  3. Once tender, add chicken and let it cook for 5 minutes

  4. Add in chicken broth and spices and bring to a a low simmer for 30 min (covered)

  5. After 30 min, add in noodles and bring to a boil for 10 min

  6. Let the soup cool on stove then serve!

  7. Enjoy!


NOTES

  1. All nutritional factors will vary based off of ingredients used.

  2. I used my leftover whole chicken, but I recommend using chicken breasts or thighs if you do not have chicken already!
