Meg's Octopus Salad

Okay i know this dish can be intimidating, but I was blown away by how easy it was to make! I love anything seafood related and I really wanted to try something different.... and man, if you guys like octopus, you will LOVE this!


The best thing about this salad is that you can add any veggies you think would taste good, but you can see I kept it similar to a greek salad! I love a good crunchy bell pepper in my salads and to be honest, next time I am going to double up on em!


This salad is Keto, Paleo, GF, DF, Whole30 & AIP


I bought my pre cooked octopus from Farmboy but you can buy frozen octopus almost anywhere!


If you are feeling adventurous, here are some foods you could add in...

- cherry tomatoes

- artichokes

- feta

- jalapeños

- zucchini


This dish can be a mid week lunch or a fancy appetizer for when we can all see eachother again!


Meg's Octopus Salad

Prep Time: 10 min Total Time: 10 min Servings: 4

INGREDIENTS


for the salad

  1. 1 lb cooked octopus, chopped

  2. 1/2 red onion, diced

  3. 1/2 large cucumber, diced

  4. 2 Peppers, diced

  5. 2 tbsp olive oil

  6. 2 tbsp red wine vinegar

  7. 1 tsp garlic powder

  8. 1/2 tsp oregano

  9. 1 tbsp lemon juice

  10. salt n' pepper

INSTRUCTIONS


for the cookies

  1. Mix all salad ingredients in a large bowl

  2. Enjoy!


NOTES

  1. All nutritional factors will vary based off of ingredients used.

  2. Store in fridge for up to 5 days
